The Cilantro Lime Shrimp is full of flavor and takes about 10 minutes to prepare! Serve it with rice or tacos for an easy weeknight dinner!

Shrimp with coriander and lime

Cilantro Lime Shrimp are super easy to make and packed with flavor!! This is always in my dinner rotation. We serve it on rice, with tortillas to prepare shrimp tacos or on top of a salad. Ingredients

  • Shrimp: You can buy jumbo shrimp fresh or frozen, peeled or unpeeled. With the peel it is generally cheaper, but you will have to peel and clean it.
  • Seasoning: Cumin, salt, pepper
  • Garlic: Crush five cloves of garlic.
  • Files: Squeeze two tablespoons of juice from a medium lime.
  • Coriander: Chop the fresh coriander.

How to prepare shrimp with coriander and lime

  1. Season the shrimp with cumin, salt and pepper.
  2. Cook the shrimp: Heat a large nonstick skillet over medium-high heat. Add a teaspoon of olive oil and half the shrimp to the pan. Cook them undisturbed for about two minutes. Turn the prawns and cook for another minute until opaque. Transfer to a plate.
  3. Garlic: Add the remaining oil and shrimp to the pan. After a couple of minutes, flip the shrimp, add the garlic and cook for a minute. Return the first batch of shrimp to the pan and mix well so that the garlic is evenly incorporated. Remove the pan from the heat.
  4. Lime and coriander: Squeeze in the lime juice and sprinkle the cilantro over all the shrimp.

What to serve with cilantro and lime shrimp

I like to eat it with rice and an avocado and romaine salad. Here are some other suggestions on how to serve this protein:

Warehousing

Cooked shrimp can be stored in the refrigerator for up to 3 days. You can microwave it, but I recommend eating the leftovers cold.

Variations

  • Don’t like coriander? Fresh chives.
  • Change the flavors using basil or parsley and lemon juice.
  • Aren’t the shrimp golden brown? The pan may not have been hot enough or overcrowded.

  • Season the shrimp with cumin and salt and pepper to taste.

  • Return the first portion of shrimp to the pan, stir well so the garlic is evenly incorporated, and remove the pan from the heat.

  • Squeeze the lime juice all over the shrimp. Add the coriander, mix well and serve.
