I was hungry as I read this and couldn’t stop thinking about what Shrimp Crunch on Cinnamon Toast would taste like. Coconut shrimp are sweet and one of my all-time favorite seafood dishes…could granola crusted shrimp work too?? I pulled out my beloved deep fryer and decided to find out for myself.
The result was truly surprisingly delicious! The cereal makes the crispiest coating I’ve ever had, even crunchier than panko. Honestly, from now on I plan to mix all fried foods exclusively with cereals.

Notes on ingredients
- Shrimp – You can use fresh shrimp or completely thawed frozen shrimp. I recommend purchasing peeled and stripped shrimp to save time.
- Oil – You will need some oil for frying. I prefer to use peanut or canola oil.
- Strawberry jam – Jam is the base for our dipping sauce. I used to Bonne Maman strawberry jambut remove the strawberry pieces.
- Habanero hot sauce – I developed this recipe using Heartbeat Hot Sauce, which I highly recommend. Since all hot sauces have different flavor profiles and heat levels, using a different one means you may have to adjust the amount to suit your tastes.
Suggestions
- The frying temperature is fundamental. If it’s too hot, the coating will burn before the shrimp are cooked. If it is not hot enough the breading will absorb too much oil. I like to use my air fryer because it regulates the temperature. If you plan to fry shrimp in a cast iron skillet, be sure to use a thermometer.
- Don’t skip the sauce. The strawberry habanero sauce really brings this dish together. It helps take away some of the sweetness from the shrimp. A spicy pineapple salsa might be a good substitute if you want to try something different.
- Mash the cereals. How precisely you mash the cereal will affect the batter. I wanted most of the cereal to be fairly thin with a few larger pieces. To do this, I added it to a ziploc bag and hit it with a meat mallet until it reached the desired consistency. You could use a rolling pin and roll it if you have it on hand.

Add oil to your fryer’s fill line or add 2 inches to a deep cast iron skillet. Preheat to 350F.

Prepare two bowls. Add the eggs to one and beat them. Add the chopped crunchy cinnamon toast to the other.

Dip each shrimp in the eggs, then place it on the crunchy cinnamon toast. Place some on top of the prawns and press gently to make them stick.

After blending all the shrimp, gently add them to the preheated oil. Fry 3 minutes on each side.

Remove from batter and place on a rack over a baking tray to remove excess oil.
