The weather is warming here in Florida and has me looking for dinner ideas that are lighter and more refreshing than my winter dishes. And the salads definitely fit the bill perfectly!
But of course you won’t find boring iceberg lettuce salads here. I like my salads filled to the brim with delicious fresh greens and tossed with flavorful homemade dressings.

Helpful tips and variations
Massage the cabbage! Yes, I know, it seems strange. But massaging the kale with oil will help remove some of the bitterness and make the kale more tender.
Make suggestions in advance: You can prepare the salad in advance but add the dressing only when serving. You can store the dressing for up to 4 days in an airtight container.
Swap greens. Replace the kale with fresh spinach leaves, arugula, romaine lettuce, or salad greens of your choice for a slightly new twist.
Use chickpeas! If you prefer, you can replace the white beans with chickpeas. Roasted chickpeas would add a nice crunch to the salad!
Crispier toppings. You can use pepitas or sliced almonds in addition to (or instead of) sunflower seeds.
Other add-ons: For a heartier salad, you could try adding sliced ripe tomatoes, thinly sliced radishes, roasted beets, shredded carrots, or roasted beets.

ingredients
- 5 cups cabbage destemmed and shredded or sliced thinly
- 1 table spoon olive oil
- Pinch kosher salt
- 15 oz cannellini beans canned, drained and rinsed
- ⅓ cup sunflower seeds
- 1 avocado sliced to serve
Instructions

Combine all the dressing ingredients together in a bowl

Mix until smooth and set aside until ready to serve.

Wash and dry the kale. Add it to a large bowl.

Drizzle kale with olive oil and sprinkle with salt.

Take your hands and massage the kale for a couple of minutes. This will release any bitterness that kale may have.

Make the salad: Pour the dressing over the kale, followed by the white beans, sunflower seeds, salt, and black pepper. Toss the salad.

Add sliced avocado on top and enjoy!
