- Lean ground meat
- Cracker crumbs: I use saltines
- Ketchup
- Beaten eggs
- Crushed green pepper
- Salt
- Crushed bay leaf
- Dried marjoram and thyme
- Grated cheese: choose your favorite! firm mozzarella, cheddar, Swiss, gouda, gruyere, fontina – any good melting cheese will work well.
How to do it
Place all the ingredients, except the cheese, in a large bowl and mix them well.
Divide the mixture in half and place half in a prepared baking dish. Lightly press it into an even layer.
Top with a little grated cheese, then cover with the other half of the meat mixture and press down lightly so it’s even.
Cook it, remove it from the oven and sprinkle it with the rest of the cheese. Put it back in the oven and cook until the cheese has melted.
What’s the secret to moist meatloaf?
The balance of wet ingredients is what makes it moist and delicious. For my recipe, the eggs and ketchup add a lot of moisture. Also, it’s important not to overcook the meatloaf. If you’re not sure if it’s cooked, you can use a meat thermometer to check the temperature. It should be between 160 and 165°F when you remove it from the oven.
What is the best filler for meatloaf?
There are many fillers such as dried breadcrumbs, day-old breadcrumbs and I have even seen rice, oatmeal and crushed chips used as fillers! Everyone probably has a favorite, but I think the best filler is cracker crumbs. They work so well in meatloaf.

- You can also freeze it. Cool it completely, then wrap it tightly and store it in the freezer for later.
- Or assemble it a few hours in advance and store it in the refrigerator. Then put it in the oven to cook. Just add a few minutes of cooking time as it will be cold when it goes in the oven.
