  • If stored correctly it will keep in the fridge for a week!

This recipe requires only 3 ingredients: heavy/whipped cream, powdered sugar, and culinary lavender.

Lavender. If you choose to use loose lavender, make sure you use kitchen-safe lavender (that hasn’t been treated with sprays or chemicals).

THE the best culinary lavender comes from Lavandula angustifolia plants, also known as English/true lavender. This type contains much less oil than the aromatic lavender used in perfumes or soaps.

You can also use lavender tea bags. I recommend opening the bags when mixing them with the cream. For this recipe you will use 2 tea bags if you are not using loose lavender.

Powdered sugar. I like to use powdered sugar to make whipped cream, as it melts more easily. You can still use granulated or granulated sugar. You can also use lavender sugar for a stronger, more aromatic flavour lavender cream.

🍋Flavor variations

Vanilla extract. A teaspoon of vanilla extract is an optional ingredient for this recipe.

If you want your whipped cream to have a stronger lavender flavouryou can replace the vanilla with lavender – I can teach you how to make lavender extract for baking! If using lavender extract, add only ½ teaspoon.

Lemon zest. For a lemon-lavender whipped cream, when adding the powdered sugar, add 2 teaspoons of lemon zest.

Lavender honey. Replace the powdered sugar with 1 1/2 tablespoons of your favorite honey. For this variant, add honey to the cream, whipping everything from the beginning.

🥄How to do it

In this recipe, we are infuse the cream with lavender instead of heating it.

I find this works best for everyone: if you overheat the cream, or don’t wait for it to cool enough before whipping it, it won’t whip at all and you’ll waste time and ingredients. I always infuse instead of heating the cream when I whip it.

Step 01. In a clean jar or container, add whipping/heavy cream and lavender. Mix, close the lid and store in the refrigerator for 12 to 24 hours. The longer you brew the cold brew, the stronger the flavor.

Step 02. Pour the cream through a fine mesh strainer to remove the lavender.

Step 03. Using a whisk or mixer, beat the infused whipping cream (high speed if using mixer) until soft peaks form (about 2 minutes). Add the sugar and extract, if using, and beat for an additional 1 to 2 minutes, until medium to firm peaks. Be careful not to overdo it!

Step 04. Store in an airtight container inside the refrigerator if not used immediately. It will keep for about a week if stored correctly.

✔️Advice from the experts

Cool the bowl you will use to assemble. If your kitchen gets hot or if you are making this recipe during the warm months, chilling the bowl will help the recipe blend properly. Place it in the refrigerator for an hour.

Make sure the infused cream is cold before assembling it. Cold cream whips faster and better.

Check the expiration date of whipping cream before starting the recipe. Old whipping cream will be harder to whip or won’t whip at all.

Do not use thawed frozen cream for this recipe Some say you can whip cream after freezing and thawing it, but every time I’ve tried I’ve failed. When whipping, choose fresh cream.

If you use whipped cream to decorate cakes, pastries or other baked goods, wait until they have cooled completely before garnishing or filling them. If hot or warm, the whipped cream will melt.

Why won’t my whipping cream whip?

If your whipping cream won’t whip, it could be one of these things: it’s not cold enough, the whipping cream is old, it contains less than 30 percent milk fat, you’re using thawed frozen cream.

How to store whipped cream?

Store leftovers in an airtight container for up to a week. If it deflates, just blend until thick again.

Is there a vegan alternative to whipping cream that works?

There are many vegan alternatives on the market to whipping cream. I tried it with Silk Dairy Free Whipping Cream and it worked perfectly for this recipe.
