My husband loves fajitas! It’s the one thing he ordered while we were on vacation in Mexico… every single day! I could never order the same meal every day, but that’s a different story. He claimed that these shrimp fajitas were better than any he had ever had at a restaurant – now that’s a compliment from my fajita-loving husband! - Onions and Peppers: Season the sliced ​​onions and peppers (any color) with salt and pepper and cook in olive oil.

- Shrimp: You can buy fresh or frozen shrimp. If they are not already peeled and cleaned, clean them before cooking.

- Cook the onions and peppersseasoned with salt and pepper, in a cast iron skillet on the stovetop or grill. Cook for 15-20 minutes until the onions are caramelised.
- Season the shrimp with salt, pepper and chipotle chili powder.
- How long to cook raw shrimp: Heat the oil in a large skillet over high heat and cook the garlic and prawns for 2 minutes on each side. Remove from heat.
- Final touches: Season the prawns with the juice and coriander and add them to the peppers and onions.

- Refrigerator: Leftover shrimp will last 3 days in the refrigerator and can be stored with the onions and peppers. Place other seasonings in separate containers.
- Heat: Place the shrimp and vegetable mixture and tortillas in the microwave and assemble the fajitas before eating.
