What you will need for this Tater Tot Casserole

  • Potato babies – Use any brand of frozen croquettes in this recipe or frozen potato puffs – any shape will work.
  • Beef – Use lean ground beef in this recipe. Can be replaced with ground chicken or ground turkey.
  • Soup – Condensed cream of mushroom soup is the sauce base for this recipe and makes preparation super quick. Replace it with any one condensed cream soup like cream of celery or chicken.
  • Vegetables – Use a mix of frozen vegetables or replace it with leftover cooked vegetables.
  • Cheese – Sharp cheddar offers the best flavor, but shredded mozzarella, Monterey Jack or a Mexican blend works in a tater tot casserole.

How to Make Tater Tot Casserole

  1. Cook the ground beef and onion and drain the fat (recipe below).
  2. Mix together the vegetables, soup, milk, seasonings, beef and some cheese.
  3. Spread the mixture into a saucepan and cover with the remaining cheese.
  4. Arrange the croquettes on top and bake.

Leftovers?

Leftover tater tot casserole is even better the next day! Store in an airtight container in the refrigerator for up to 4 days and reheat portions in the microwave. Wrap leftovers in a tortilla for a filling (and portable!) lunch at school or work.

Freeze portions in zip-top bags for up to 4 months and thaw overnight before reheating.

Classic Tater Tot Casserole

Cheesy, creamy, and packed with hearty ingredients, tater tot casserole is comfort food at its best!

  • Preheat oven to 375°F.

  • In a large skillet over medium-high heat, sauté the ground beef and onion until no pink color remains. Drain off the fat.

  • In a medium bowl, mix thawed vegetables, soup, milk, seasonings, beef mixture and ½ cup shredded cheese.

  • Spread beef mixture into a 3qt or 9×13-inch baking dish. Sprinkle remaining cheese on top.

  • Top with croquettes and bake for 40-50 minutes or until sauce is bubbly and croquettes are golden brown.

*If using fresh vegetables such as carrots and celery, they should be steamed or pan-fried with the browned beef until tender.
Frozen vegetables must be defrosted first. You can add any variation or blend of vegetables.
Canned mushroom soup can be substituted with other “cream of” soups, gravy, or even a can of gravy or tomato soup.
You can use any size saucepan for this recipe. A deeper dish may require a little more cooking time.
This casserole can be assembled ahead of time and refrigerated. If chilled from the refrigerator it will require extra cooking time.
Leftovers will keep for 4 days in the refrigerator and 4 months in the freezer.
